Tom Hitchcock grew up in Weipa, in Far North Queensland — about as far from the fine dining circuit as it is possible to get. It was there, in the town’s modest kitchens, that he first learned to cook. He has been learning ever since.

Tom arrived on the Sunshine Coast via a career path built on patience and loyalty. He worked at Ricky’s River Bar in Noosa, then joined Spirit House in 2018 as a chef de partie under head chef Aaron Tucker. He moved on to The Long Apron in Maleny, working under the celebrated Cameron Matthews, before returning to Spirit House as head chef in 2022. He was twenty-eight years old.

Within a year, he had won Queensland Chef of the Year — then went to Melbourne and became the first Queensland chef in history to win Australian Chef of the Year at Foodservice Australia 2023. Tom responded by asking Spirit House to gather eighteen adventurous diners for an eight-course chef’s table so he could keep experimenting.

His food is rooted in Southeast Asian technique — the flavours of Thailand, the precision of Japan, the depth of fermentation — filtered through the extraordinary local produce of the Sunshine Coast hinterland. Fermentation is both a philosophy and a practice: “It is a process that forces you to slow down and pay attention,” he says. “A little funk changes everything.”

He is also quietly pioneering a new kind of kitchen culture — one built on education and care over pressure and burnout. In a profession that too often chews people up, Tom Hitchcock is proving that the best food comes from a team that arrives inspired and leaves proud.
