Executive Chef: Matt Sinclair

There is a philosophy at the heart of Peli’s that is easy to state and hard to execute: do the simple things well. In the hands of Matt Sinclair, Michael Rickard and Jeremiah Jones — the celebrated trio behind Sunshine Coast institution Sum Yung Guys — it is executed with a precision and warmth that has made Peli’s one of the most talked-about openings on the Noosa Marina since the restaurant launched on 12 September 2024.

The three men have history. They met working together at Bistro C on Hastings Street, went on to open Sum Yung Guys in Sunshine Beach in 2017, and built it into one of the most awarded restaurants on the Sunshine Coast — earning a Chef Hat from the Good Food Guide, a Top 50 listing in The Australian, and a Gourmet Traveller award along the way. Matt, who also ran as MasterChef Australia runner-up in 2016 and became a Tourism Noosa Ambassador, has become one of the most recognisable culinary faces in Queensland. He and his partners spent eighteen months planning, designing and building Peli’s before opening the doors.

The result is a waterfront bistro at Noosa Marina inspired by the splendour of the Mediterranean coast — drawing from Greek, Italian and Spanish cuisines with Lebanese and Croatian inflections that give the menu its nuanced, well-travelled character. A custom-built charcoal grill puts fire and smoke to protein, seafood and vegetables, producing dishes of genuine depth: Port Lincoln sardines with pangrattato, citrus and currants; barbecue swordfish with ‘nduja-braised cannellini beans and gremolata; half slow-roasted lamb shoulder with toum, cranberries and parsley salad; burnt butter carrots with labneh, zaatar and pepitas. These are share plates built for conversation, for lingering, for the kind of meal that doesn’t end quickly.

The setting matches the ambition. Warm tones, natural materials, iconic waterfront views across the Noosa River, and a private dining room seating forty guests overlooking the water — one of the most intimate event spaces in the region. The Noosa Ferry stops at the Marina, making arrival by river a genuine option and adding its own particular Noosa magic to the occasion.

“Peli’s was born from the idea of doing the simple things well,” the restaurant says of itself. The shared-style approach, the friendly and energetic service, the Mediterranean heart — all of it reflects a team who have earned their confidence through years of consistent excellence and know exactly what they are doing.
